Erbai's Favorite Sweet & Sour

    This is really a delicious recipe. It is a bit time consuming to make but it is worth it! I Came up with this recipe when it was pineapple harvest at our farm and I had to come up with ways to use the pineapples. The secret to this recipe is the fresh perfect ripe pineapple. So please find good pineapples for this recipe and enjoy.

    Serves: 4 

    • 1 cup Ketchup
    • 1 Tbsp Vinegar
    • 3 Tbsp Sugar
    • 1/4 cup Water
    • 1 cup Flour
    • 1 tsp Salt
    • 1 tsp Black Pepper
    • 1 Cup Vegetable Oil (for frying more or less depending on your pan size)
    • 2 Cups Diced Chicken Meat (1 inch squares)
    • 1 whole Red Bell Pepper (1 inch Cubed)
    • 1 Cup Fresh Pineapple (slices 1 inch square)
    • 1 Whole Onion (1 inch Cubed )
    • 1 stick Carrot (Julian sliced)
    • 1 Cucumber (Cut in half, scape out seeds and jullian sliced)

    1. In a medium bowl mix flour, salt and pepper
    2. Coat each chicken in flour mixture
    3. Heat oil in frying pan and fry chicken till lightly brown and crispy. Let cool and set aside.
    4. In a large wok, heat 1 Tbsp oil. When steaming hot (this is important the wok has to be very hot)stir in pineapples, stir for 1 minute.
    5. Lower temprature and stir in carrots, stir for 1 minute. Then add in onion, bellpepper & cucumber keep stiring for 1 more minute.
    6. Take out all vegetables from wok and set aside.
    7. Ketchup Mixture: Mix Ketchup, sugar,water, vinegar in a bowl
    8. Place wok back on the stove and pour ketchup mixture in. Let it come to a boil and stir. Lower heat and stir for another 2 minutes. Mixture should thicken a little.
    9. Stir in the vegetable stir for a minute. Turn off heat and stir in the meat. Remove from heat immediately so that vegetables don't over cook. It's most pleasant when veggies still have a bit of a crunch to them. Place Sweet and Sour on a serving dish. Serve with a bowl of hot rice.


    You can use pork, fish or beef instead of chicken. **You may also increase or decrease the sugar in this recipe to your liking.
