This is really a delicious recipe. It is a bit time consuming to make but it is worth it! I Came up with this recipe when it was pineapple harvest at our farm and I had to come up with ways to use the pineapples. The secret to this recipe is the fresh perfect ripe pineapple. So please find good pineapples for this recipe and enjoy.
Heat oil in frying pan and fry chicken till lightly brown and crispy. Let cool and set aside.
In a large wok, heat 1 Tbsp oil. When steaming hot (this is important the wok has to be very hot)stir in pineapples, stir for 1 minute.
Lower temprature and stir in carrots, stir for 1 minute. Then add in onion, bellpepper & cucumber keep stiring for 1 more minute.
Take out all vegetables from wok and set aside.
Mix Ketchup, sugar,water, vinegar in a bowl
Place wok back on the stove and pour ketchup mixture in. Let it come to a boil and stir. Lower heat and stir for another 2 minutes. Mixture should thicken a little.
Stir in the vegetable stir for a minute. Turn off heat and stir in the meat. Remove from heat immediately so that vegetables don't over cook. It's most pleasant when veggies still have a bit of a crunch to them. Place Sweet and Sour on a serving dish. Serve with a bowl of hot rice.
You can use pork, fish or beef instead of chicken.
**You may also increase or decrease the sugar in this recipe to your liking.
