Japanese Potato Salad

    Had this recipe in a Japanese restaurant and loved it.

    Serves: 6 

    • 6 potatoes
    • 1 cup Japanese mayonnaise
    • 1 teaspoon wasabi
    • 1 tablespoon light soy sauce
    • 1 teaspoon rice vinegar
    • 1 cup pickled Japanese ginger

    Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Peel and cut potatoes in cubes and add to a saucepan of water. Add wasabi paste and soy sauce then cook until tender. Add rice vinegar.
    2. Drain. While still warm add Japanese mayonnaise and mix into potatoes. Serve on platter top with pickled ginger.
