Gorgeous individual tarts

Serves: 19 

  • 3 Sheets Sweet Short Pastry
  • 3 Eggs
  • 1/2 cup Sugar
  • 500g Ricotta
  • 1 Lemon - rind only
  • 19 tsp Jam or Lemon Curd

Preparation:30min  ›  Cook:20min  ›  Extra time:10min cooling  ›  Ready in:1hour 

  1. Cut circles (ours is 10cm diameter) of pastry to fit cupcake tin, insert circles into tin cavities.
  2. Beat eggs, add sugar, ricotta and lemon rind, combine until evenly mixed.
  3. Add a teaspoon of jam or lemon curd into the pastry cups.
  4. Top with ricotta mixture until almost full.
  5. Bake for 20 mins at 180 degrees Celsius
