Trying to cut sugar out of my diet, its been had going and it helps to have some yummy sugar-free snacks to fill the void! These muffins taste delish and have worked for me every time I have baked. It does contain fruit so not 100% sugar free... They are lovely and moist and keep quite well too.

Makes: 12 Muffins

  • 1 Egg
  • 1/4 Cup Oil
  • 1/2 Cup Splenda for Baking
  • 1 Cup Milk
  • 2 Cups Plain Flour
  • 5 Teaspoons Baking Flour
  • 2 Teaspoons Cinnamon
  • 1 1/2 Cups Fresh or Frozen Berries
  • 1/2 Cup Apple Puree (I use baby food)

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Beat egg, oil, splenda and milk together in a bowl.
  2. Sift flour, baking powder and cinnamon into egg mixture.
  3. Add fruit and mix lightly to just combine.
  4. Spoon into greased muffin tins.
  5. Bake at 200°C for 15-20 minutes or until a skewer comes out clean.

Make it healthier

Try replacing some of the plain flour with wholemeal flour.
