My Cheesy Bacon and Corn Muffins

    Makes: 12 

    • 125g shortcut bacon, diced
    • 1 3/4 cups SR Flour
    • 2 cups grated cheese
    • 1 1/2 cups milk
    • 1 egg
    • 60g butter, melted
    • 125g canned corn kernals, drained

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat Oven to 200 deg C and grease a muffin tray
    2. Fry bacon for 3 minutes until crisp, cool
    3. Sift flour into a bowl and add cheese, stir to combine
    4. Whisk milk, egg and butter together. Add flour with corn and bacon and mix quickly to and lightly together
    5. Place mixture in tray and bake in oven for 20 minutes until golden. Cool on a wire rack

    Other ideas

    I used creamed corn in my last recipe and also have used frozen corn kernels
