- 125g shortcut bacon, diced
- 1 3/4 cups SR Flour
- 2 cups grated cheese
- 1 1/2 cups milk
- 1 egg
- 60g butter, melted
- 125g canned corn kernals, drained

- Preheat Oven to 200 deg C and grease a muffin tray
- Fry bacon for 3 minutes until crisp, cool
- Sift flour into a bowl and add cheese, stir to combine
Whisk milk, egg and butter together. Add flour with corn and bacon and mix quickly to and lightly together- Place mixture in tray and bake in oven for 20 minutes until golden. Cool on a wire rack
Other ideas
I used creamed corn in my last recipe and also have used frozen corn kernels
