spicy tomato and pumpkin soup

    A nice pumkin soup that is a bit different from the traditional

    Serves: 6 

    • 1 litre chicken stock
    • 1 cup water
    • 1 large tin tomato soup
    • 1 onion
    • 1/2 pumpkin
    • 1tablespoon brown sugar
    • 1 tablespoon olive oil
    • to taste chillie flakes

    Preparation:15min  ›  Cook:1hour  ›  Extra time:5min Other  ›  Ready in:1hour20min 

    1. dice onion and cube pumpkin
    2. add oil to a large soup pot and add onion, pumpkin and sugar
    3. caramelise for 10 mins on medium heat until golden
    4. add stock, tomato soup and water
    5. simmer for 45 mins and add chillie flakes to desired taste
    6. take off heat and puree until creamy

    Serving suggestion

    serve with a dollop of cream and chopped parsley
