I love cordials, they're easy to make and they keep for up to a month in the fridge so you can always make a quick cold drink.
2 cups (440g) white sugar
1 1/2 cups (375ml) water
2 cups (500ml) fresh grapefruit juice
3 teaspoons citric acid
soda water, to serve

Place the sugar, water and grapefruit juice in a medium saucepan. Cook, stirring every now and then, over high heat until the sugar dissolves and the syrup comes to the boil.
Reduce the heat to medium-low and simmer for 20 minutes, or until the syrup thickens slightly. Stir in the citric acid. Strain the cordial into a sterilised bottle.
To serve, pour a small amount of syrup into glasses, top with soda water, stir well and serve immediately. Adjust syrup to taste if necessary.
Fantastic! A friend gave me some grapefruit and I tried this recipe. It was perfect; I have finally found a delicious adult cordial.
