Grapefruit Cordial

    I love cordials, they're easy to make and they keep for up to a month in the fridge so you can always make a quick cold drink.

    Serves: 8 

    • 2 cups (440g) white sugar
    • 1 1/2 cups (375ml) water
    • 2 cups (500ml) fresh grapefruit juice
    • 3 teaspoons citric acid
    • soda water, to serve

    Preparation:35min  ›  Cook:25min  ›  Ready in:1hour 

    1. Place the sugar, water and grapefruit juice in a medium saucepan. Cook, stirring every now and then, over high heat until the sugar dissolves and the syrup comes to the boil.
    2. Reduce the heat to medium-low and simmer for 20 minutes, or until the syrup thickens slightly. Stir in the citric acid. Strain the cordial into a sterilised bottle.
    3. To serve, pour a small amount of syrup into glasses, top with soda water, stir well and serve immediately. Adjust syrup to taste if necessary.
