Blood Orange Cordial

This is my favourite thing to do with blood oranges when they are in season - make cordial! The citric acid adds a pleasant sharp note to a sweet drink.

Serves: 8 

  • 2 cups (440g) white sugar
  • 1 1/2 cups (375ml) water
  • 2 cups (500ml) freshly squeezed blood orange juice
  • 3 teaspoons citric acid
  • ice water or soda water, to serve

  1. Place the sugar, water and blood orange juice in a medium saucepan. Cook, stirring every now and then, over high heat until the sugar dissolves and the syrup comes to the boil.
  2. Reduce the heat to medium-low and simmer for 20 minutes, or until the syrup thickens slightly. Stir in the citric acid. Strain the cordial into a sterilised bottle. The cordial will keep, refrigerated, for up to one month.
  3. To serve, pour the syrup into glasses, top with ice water or soda water, stir well and serve immediately.
