Spicy Chili Carrots

    This is a simple side dish with a bit of a kick. Use it to spice up a roast dinner or serve it in a salad. It's also perfect for vegetarians and for people with special diets that can't eat meat or dairy.

    Makes: 40 carrot pieces

    • 4 tablespoons mild to hot chilli powder
    • 4-5 large carrots
    • 1/4 cup canola oil

    1. First preheat the oven to 180 degrees C and grease a large rectangular baking tray.
    2. Now wash and peel the carrots, you want to remove all dirt from the carrots.
    3. Next chop each carrot into about ten pieces. Be careful to not make your pieces too small as you don't want to let them soak up too much oil.
    4. The next step is to pour half of the oil in to the tray and swish it around so it covers the bottom of the tray.
    5. Put the carrot in the tray and sprinkle the chili powder on top, making sure that you cover the carrots well. If you have extra left over then sprinkle it around the pan in the oil.
    6. Sprinkle the rest if the oil over the carrots and out them in the oven.
    7. Check the carrots every 5-10 minutes and move them around the pan to ensure they dont stick. Serve them as soon as possible.
