    For those on a budget, or if you're single! My hubby used to make this all the time, it's super easy and not bad at all.

    Ingredients
    Serves: 4 

    • 1 packet San Remo Chicken Curry Pasta
    • 2 cups frozen mixed vegetables
    • 1 tsp margarine
    • 1 whole cooked barbecue chicken

    Directions
    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Shred the whole cooked chicken, discard the bones. Chop the chicken into bite-sized pieces.
    2. Cook the curry chicken pasta in a large saucepan according to the packet directions.
    3. When pasta is 2 minutes away from being cooked, add the 2 cups of frozen mixed vegetables and simmer over low heat to cook the vegies through.
    4. Add chopped cooked chicken and stir until heated through thoroughly. Serve in a large dish alongside a crispy salad and some fresh bread.

    Tip

    You can add extra curry powder to this meal when adding the frozen mixed vegetables, if desired.
