Low Calorie Chocolate Brownies

    These chocolate brownies are decadent, moist and full of flavour, you'll find it hard to stop at one but at only 95 calories a slice, you won't have to feel so guilty.

    Makes: 18 slices

    • 85g Nuttelex light margarine
    • 80g raw sugar
    • 70g sunbeam sultanas
    • 2 medium eggs
    • 120g wholemeal self-raising flour
    • 45g nestle cocoa powder
    • 1 teaspoon vanilla extract
    • 15g dessicated coconut
    • 60 ml water

    1. Melt the margarine in the microwave for approximately 30 seconds. Add the sultanas and sugar, and combine.
    2. Add the flour, cocoa, vanilla extract, and coconut. Combine well.
    3. Add the water and mix until thoroughly combined.
    4. Turn mixture out onto a slice or lamington tray lined with baking paper. Spread evenly with a spatula.
    5. Bake in a moderate (180 to 200 degrees) oven for 25 to 30 minutes. *Note this brownie mix will not rise very high*
    6. Transfer to cooling rack and let sit for 15 to 20 minutes before dividing into slices.

    Freezing tip

    Slice can be frozen in an airtight container. Just separate with baking paper if stacking.
