Sick of serving pasta salad and coleslaw at the barbie? Easy and healthy salad that everyone will love.

Serves: 8 

  • 500g pumpkin
  • 1 clove of garlic
  • 1 tablespoon oil
  • 150g pine nuts
  • 300g bag rocket leaves
  • 1/2 cup ranch dressing

Preparation:15min  ›  Cook:30min  ›  Extra time:1hour cooling  ›  Ready in:1hour45min 

  1. Dice pumpkin into bite sized pieces. Finely chop garlic. Toss pumpkin with garlic and oil and roast in oven till tender. (I turn oven up to 250 degrees C for last five minutes to slightly char corners). Leave to cool.
  2. Wash rocket leaves and place in bowl. Toss the roasted pumpkin and pine nuts through the rocket saving a few to place on top.
  3. Dress with ranch dressing.
