Just a standard coconut macaroon recipe but with the addition of white chocolate to sweeten it up a bit. I use dairy-free chocolate but any white cooking chocolate will do.
Preheat oven to 150 degrees. Grease and line oven trays with baking paper.
Beat egg whites with an electric mixer until soft peaks form. Gradually add sugar, beating until dissolved. Stir in extract, sifted flour, chocolate bits and coconut in two batches.
Place level teaspoons of the mixture onto the trays spaced about 5cm apart. Bake for 30 minutes and allow to cool on the trays
