    I love finding ways to add a little oomph in nutrition to my kiddos favourite treats. We have become big users of chia, and heck, just to keep everyone's insides working well, we add a tidbit of psyllium husk. The bonus is that you can buy Chia at Coles now and a little goes a long ways.

    Ingredients
    Serves: 6 

    • 2 1/2 cups self-raising flour
    • 1/2 cups ricotta cheese
    • 1 cup orange juice, or any tropical juice you like
    • 1/8 cup extra virgin olive oil
    • 3 eggs
    • 1/4 cup chia seeds
    • 2 tablespoons pysillium husk
    • water or milk to thin to pancake consistancy (note-the longer the psyllium sits the more it gells the pancake mix, do not make this the night before)
    • butter for pan

    Directions
    Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

    1. Combine all ingrediants except the butter and mix until smooth. Butter pan and put pancakes on. Can top with anything. We love strawberries and maple syrup, bananas with nutella, or just plain ol boysenberry syrup. :)
