Almond and Mandarin Salad

    Fresh and healthy this is a great salad that combines the protein of the nuts with the sweetness of mandarins.

    Serves: 8 

    • 250g bacon
    • Dressing
    • 2 tablespoons white wine vinegar
    • 3 tablespoons honey
    • 1/2 teaspoon dry mustard
    • 1/2 teaspoon celery salt
    • 1/2 teaspoon ground paprika
    • 1/4 cup (60ml) olive oil
    • Salad
    • 1 head of lettuce, torn into bite-size pieces
    • 5 mandarins, segmented
    • 1 bunch of spring onions
    • 3/4 cup slivered almonds

    Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

    1. In a medium frypan over medium-high heat cook bacon until evenly brown. Drain, cool then crumble.
    2. Dressing: Thoroughly blend the vinegar, honey, dry mustard, celery salt, paprika and olive oil.
    3. Salad: Place lettuce, mandarins, spring onion, bacon and almonds in a serving bowl. Toss with dressing and serve.

    I don't cook. My wife does. However, in an effort to help my wife, because we were in a time crunch, I found this website and this recipe. I don't even know what dry mustard or white wine vinegar are. Be that as it may, I made this salad and it was great. Very tasty flavored with the salt of the bacon and the sweet of the honey.     I thought this recipe was great! I used a teaspoon of real dijon mustard instead of dry mustard and used turkey bacon instead of the real thing (just as good).
