    Fresh and healthy this is a great salad that combines the protein of the nuts with the sweetness of mandarins.

    Ingredients
    Serves: 8 

    • 250g bacon
    • Dressing
    • 2 tablespoons white wine vinegar
    • 3 tablespoons honey
    • 1/2 teaspoon dry mustard
    • 1/2 teaspoon celery salt
    • 1/2 teaspoon ground paprika
    • 1/4 cup (60ml) olive oil
    • Salad
    • 1 head of lettuce, torn into bite-size pieces
    • 5 mandarins, segmented
    • 1 bunch of spring onions
    • 3/4 cup slivered almonds

    1. In a medium frypan over medium-high heat cook bacon until evenly brown. Drain, cool then crumble.
    2. Dressing: Thoroughly blend the vinegar, honey, dry mustard, celery salt, paprika and olive oil.
    3. Salad: Place lettuce, mandarins, spring onion, bacon and almonds in a serving bowl. Toss with dressing and serve.
