Chicken Pot Pies

    These are just stunning. An amazing white saucey but flavoursome filing and puffy topping.

    Makes: 5 

    • 1 large chopped carrot
    • 1 small chopped onion
    • 1 large chopped potato
    • 1/2 cup frozen peas
    • 1/2 cup frozen corn
    • 2 chopped chicken breasts
    • 40g butter
    • 2 tblspoons plain flour
    • 3/4 cup milk
    • 3/4 cup chicken stock
    • 2 sheets puff pastry

    Preparation:2hours  ›  Cook:25min  ›  Ready in:2hours25min 

    1. Prehet oven to 210 C. Grease four/five ramekins.
    2. Put onion, carrot, potato in a pan and cook. At the last minute add peas and corn.
    3. In a seperate pan, cook chicken until white.
    4. In a saucepan melt butter. Add plain flour and whisk. Gradually add combined milk and stock. Boil until it thickens. Get puff pastry out of freezer to defrost.
    5. Combine vegies, chicken and white sauce. Pour into greased ramekins and top with cut puff pastry sheets.

    Excellent, easy to make, delight to eat. Will definitely do again, following the recipe exactly it made four ramekins of approx 1.75 cups size each  -  09 Apr 2013
