Scalloped Potatoes with Zucchini

    With an abundance of zucchini from our vege garden we missed one zucchini which grew too big - so I decided to make scalloped potatoes with a twist by adding slices of zucchini as an alternate layer, therefore using less potatoes.

    Serves: 6 

    • 3 medium potatoes, peeled and sliced
    • 1 medium onion, sliced
    • 1 large zucchini, sliced
    • 300ml cream
    • 1 handful grated cheese
    • salt and pepper, to taste

    Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

    1. Spray a large casserole dish with oil. Alternately layer zucchini, potatoes and onion finishing with a potato layer. Add salt and pepper between layers if preferred to taste.
    2. Pour cream over potatoes and sprinkle top with grated cheese.
    3. Bake at 180 degrees C for approx. 45 minutes until vegetables are cooked and top is nicely browned. Serve as an accompaniment to meat and green vegetables.

    Make it healthier

    Use light cream instead of cream.
