Thai Salmon Salad

    A salad of warm salmon, thinly-sliced onions, tomatoes and basil with a spicy Thai-inspired salad dressing.

    Serves: 6 

    • 4 tablespoons fish sauce
    • 4 tablespoons lime juice
    • 2 teaspoons brown sugar
    • 4 red chillies, diced
    • 750g salmon fillet
    • 1 teaspoon olive oil
    • 1 red onion, thinly sliced
    • 1 large tomato, diced
    • handful chopped fresh basil
    • 1 head cos lettuce

    1. Prepare the dressing by combining the fish sauce, lime juice, sugar and diced chillies in a small bowl; set aside.
    2. Place the salmon on a baking tray and rub with olive oil. Bake for 20 minutes in preheated oven or until easily flaked. Let cool for at least 15 minutes.
    3. Place salmon into a large bowl; use fork to break salmon into large pieces. Add onion, tomato and basil; pour dressing over and toss lightly until well mixed.
    4. Place mixture on lettuce leaves and serve immediately.

    this was delicious. everyone i have made it for has asked for the recipe. you may be put off by the smell of the fish sauce, but it tastes great in the salad dressing.  -  08 Oct 2008


    This is a god recipe. I did not have limejuice so substituted lemmon juice and rice wine vinegar for that. We can't use fish sauce due to allergies so I used water and salt instead. I added some cucumber cut in matchsticks. However I am sure the recipe is great as is, and I want to try t with lime juice, soon. A great summer dish!  -  13 Jun 2011


    Used different ingredients. This was delicious. I added some grated cucumber and a little sesame oil to the dressing. This is a very fast meal if the salmon has already been cooked.  -  08 Oct 2008
