Low Fat Waldorf Salad with Shredded Roast Chicken.

    Waldorf Salad is yummy, but mayo can be a little high in cholesterol, so I made a variation that features a healthier dressing. It's great for making use of left over roast chicken.

    Serves: 4 

    • 1/2 cup chopped walnuts
    • 2 cups diced Royal Gala Apples
    • 1/3 cup finely diced red radish
    • 1 cup diced celery
    • 2 cups sliced iceberg lettuce
    • 1/2 cup fat free natural yoghurt
    • 1 teaspoon lemon juice
    • pinch each of salt and ground black pepper
    • 1 cup shredded roast chicken

    1. For the dressing:combine the yoghurt, lemon juice and salt and pepper and mix well.
    2. Put the diced apple, radish, celery, lettuce, half the amount of walnuts and the yoghurt dressing in a large bowl and fold in until everything is coated well with the yoghurt dressing
    3. Serve with the shredded chicken on top.


    You can always add a little lemon pepper seasoning to the yogurt dressing in place of the salt and pepper. Can be served without chicken and if you are vegan just replace the yogurt with some soy yogurt :)
