Vegetable Soup with Ham

    A hearty cabbage based vegetable soup made heartier with ham and you can also add cream if you like.

    Serves: 6 

    • 1 cabbage cut into (approx) 4cm square chunks
    • 4 small potatoes, washed and diced
    • 4 medium carrots, peeled and chopped
    • 3 turnips, peeled and chopped
    • 4 slices of ham or bacon
    • 1/2 bunch of curly pasley
    • salt and freshly ground pepper to taste
    • 2 cups stock
    • 2 tablespoons heavy cream

    1. Place everything in the pressure cooker except the cream.
    2. Close the lid and once it comes to pressure cook for 25 minutes
    3. Once its finished cooking, put 3/4 of vegetables in a bowl. Blend the remaining contents of the pressure cooker well. Add water at this point if you like according to the consistency you want.
    4. Stir in the cream if using, check the taste them pour over the rest of the vegetables in the bowl and serve.

    No pressure cooker?

    Cook this on the stove top for 45-50 minutes. Keep an eye on the water level and add more if needed during cooking.
