If you've got a lot of leeks this is a great way to make them into a side dish. The cottage cheese vinaigrette adds a nice taste. The leeks are steamed in the pressure cooker.
Remove any hard outer leaves and cut off the ends of dark green ones that remain. Split leeks in half lengthways to about 5 cm from the white end so you can wash them thoroughly.
Pour the water in the pressure cooker. Add salt to taste. Place the leeks in the steamer basket and cook for about 15 minutes after it comes to pressure.
While the leeks are cooking, make the vinaigrette by combining all the ingredients in a bowl. When leeks are cooked, release the pressure and remove the leeks.
Let cool slightly, put them on a serving plate and pour the vinaigrette over.
