Pumpkin Puree for Pumpkin Scones or Pumpkin Pie

There's no mystery to cooking pumpkin really but using the pressure cooker and steamer means water doesn't get into the pumpkin when its cooking, the flavour stays and it's quick.


Serves: 10 

  • a medium sized pumpkin
  • a cup of water
  • a tablespoon of sugar
  • a pinch each of salt, cinnamon and nutmeg

Preparation:5min  ›  Cook:20min  ›  Ready in:25min 

  1. Cut and peel the pumpkin, remove all the seeds etc and cut into chunks.
  2. Pour water into a pressure cooker and place the pumpkin in the steamer basket. Bring to pressure and cook for 20 minutes.
  3. Remove the safety valve and then open the pressure cooker. Put the pumpkin into a bowl. Add the sugar, salt, cinnamon and nutmeg and puree with a stick blender. (Or do it all in a blender.)
  4. Cool the puree and then use it for your recipe or freeze in portions to use later.
