Easy Roast Pork in the Pressure Cooker

    PA pork leg roast is cooked in the pressure cooker with onions, tomatoes and mushrooms. Serve with green beans and ,ashed potatoes.

    Serves: 6 

    • 2 tablespoons olive oil
    • 1 pork leg roast (approximately 1.2 kg)
    • 3 cloves garlic
    • 1 large onion, chopped
    • 5 tomatoes, cut into wedges
    • 1 tin sliced mushrooms
    • salt and freshly ground pepper
    • a teaspoon Herbes de Provence (or mixed herbs) to taste
    • 1 tablespoon cornflour
    • 1 1/2 cups of water

    1. Cut the garlic cloves in half lengthways. With a sharp knife, make 6 incisions around the roast and place the garlic halves in the skin.
    2. In the pressure cooker, heat oil over medium-high heat. When it is hot, brown the roast on all sides. Season with salt, pepper and herbs, then add the onion, tomatoes and mushrooms (with juice). Add water and put the lid on the pot, and reduce heat to medium-low heat.
    3. Cook about 30 minutes once it comes to pressure.
    4. Remove the valve, carefully open the cooker and remove the roast to a plate.
    5. Dissolve the cornflour in a little water then pour into the juices in the pan, stirring well. Bring sauce to a boil to thicken. When it reaches your desired consistency, return the roast in the pot to reheat just before serving.

    I found this to be very easy and pretty effortless. I have never cooked with the pressure cooker, just used it for canning. We added 15lbs of pressure and cooked it for 40 minutes. I added half of a green apple that I needed to use and for the seasonings I used sage, marjoram, thyme salt and pepper. The kids loved it  -  10 Feb 2013  (Review from Allrecipes UK & Ireland)
