Quick Primavera Pasta

    Primavera means spring in Italian so enjoy the flavours of spring with this delicious pasta. Vegan too, if you omit the Parmesan.

    Ingredients
    Serves: 4 

    • 400g pasta; fettucine or pappardelle
    • 1Tbsp olive oil
    • 2tsp crushed garlic
    • 1 bunch asparagus, trimmed and sliced
    • 1Tbsp garden basil
    • 1Tbsp garden parsley
    • 400g crushed and sieved tomatoes
    • 2 courgettes, sliced into ribbons
    • shaved parmesan

    Directions
    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Cook pasta in a large pot of boiling water according to the directions on the packet. Drain and set aside.
    2. Heat oil in a non-stick pan then add the garlic and asparagus. Toss for one minute before adding the garden basil, parsley and tomatoes. Heat gently for three minutes.
    3. Add the cooked pasta and courgette ribbons and gently toss. Season with freshly ground black pepper and serve garnished with Parmesan.

    Tip

    Serve as a light meal, or for a main meal add sliced cooked chicken. If you can’t get fresh asparagus sliced beans or sugar snap peas will work just as well.
