Summer Beetroot and Cashew Salad

    Great salad to have with pasta. Great for a hot summer evening, tasty and easy to make.

    Makes: 2 Side dishes

    • 1 medium tin beetroot (slices, or whole either way), drained
    • 1 tomato
    • 1 red onion
    • 200g cashew nuts, unsalted
    • 1 small tin red kidney beans, drained

    Preparation:20min  ›  Cook:5min  ›  Ready in:25min 

    1. Heat a teaspoon of oil in a frypan, add cashews and fry turning for about 5 minutes til lightly brown. Remove from heat.
    2. Dice the red onion and tomato and beetroot.
    3. Add all ingredients into a salad bowl and mix. Serve.
