Zucchini with Mince Stuffing

    A tasty way to use some of those just oversize zucchini before they become a marrow and the skin gets too tough. It is also very economical in these budget conscious times.

    Makes: 1 depends on size of vegetable

    • 1 large zucchini
    • 500g minced meat or chicken
    • 1 small onion
    • 2 tablespoons plum sauce (or if using chicken, cranberry sauce)
    • 1 tablespoon herbs of your choice
    • salt and pepper

    Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

    1. Top and tail the zucchini but otherwise leave it whole. Hollow out most the filling out of the zucchini.
    2. Mix all ingredients together and fill the zucchini. If you have extra stuffing left over, cook that along side the stuffed zucchini in a piece of foil.
    3. Bake on a greased or baking paper lined baking dish for 1 hour at 180 degrees C.
