Blueberry custard tart

A very simple recipe to make. I use the frozen sweet flan bases you get from the supermarket but you could make your own pastry if you wanted to. This recipe can be used with other berries. I think raspberries would be especially delicious. I use the frozen blueberries for this recipe. Dust it with a thin layer of icing sugar, if you want, for presentation. The slight sweetness of the custard balances out nicely with the bitter of the blueberries.

Serves: 6 

  • 1 cup frozen blueberries
  • 1 sweet flan pasty frozen case
  • 3/4 cup thickened cream
  • 2 eggs
  • 2 tablespoons caster sugar
  • 1 teaspoon vanilla essence

Preparation:2min  ›  Cook:1hour  ›  Ready in:1hour2min 

  1. Preheat oven to 180 degrees C (or 160 for fan forced).
  2. Bake your frozen pastry flan case for 10 mins on a baking tray still in its foil container
  3. Whip up cream, eggs, caster sugar and vanilla essence lightly. No need to overdo it you just want a little air in it
  4. Take out the flan and add blueberries into it.
  5. Pour cream mixture over top of blueberries.
  6. Return tart to the oven and cook for 30 mins then turn oven down to 160 degrees C and cook 20 mins or until custard is set.
  7. Allow to cool and then dust with icing sugar if you wish. Enjoy
