Alert Biscuits (coffee)

    These biscuits are more of a continental style and will have you zinging off the wall if you are a coffee lover. I find that you need to take them with hot drink as they are a dryer type biscuit but wow, do they pack a punch. I used to sell a lot of these biscuits to the coffee lovers. They can take a little to get right and not break them taking them off the tray when they are cooked.

    Makes: 17 Approx

    • 1 1/4 cups plain flour
    • 2 tablespoons caster sugar
    • 125 grams butter
    • 60 grams walnut pieces
    • 1 egg yolk (important to use the extra large size egg)
    • 2 teaspoons instant coffee powder
    • 2 teaspoons hot water
    • 1/2 cup caster sugar ( extra)

    1. Preheat oven to 180 C.
    2. Line a baking tray with baking paper.
    3. In a food processor grind up walnuts finely.
    4. In a bowl, rub butter into flour and sugar with your fingers until it resembles breadcrumbs. (Do not add extra caster sugar at this stage)
    5. Add walnuts to the mix and mix until combined.
    6. Add egg yolk and coffee mix into flour mix. Combine well.
    7. Roll into 5 cm sausage lengths.
    8. Bake for 12 mins until the change colour slightly and firm up a little.
    9. Carefully remove from the baking tray ( they will break easily at this stage) and while warm roll into extra caster sugar.
    10. Allow to cool and eat. ( Do not cool them on a wire rack or they will break)
