Easy Apple Muffins

    Easy and tasty apple muffins. Great hot with some butter on them or cold and in kids lunches. They will love helping to make them and they don't last long around my family.

    Makes: 12 Medium or 6 Large

    • 225g self-raising flour
    • 150g plain flour
    • 1 1/2 teaspoons baking powder
    • 2 teaspoons cinnamon
    • 1 teaspoon nutmeg
    • 3 tablespoons honey
    • 2 eggs
    • 155g butter
    • 170 ml milk
    • 3 tablespoons caster sugar
    • 3 green apples chopped
    • 2 tablespoons caster sugar ( extra)
    • 1 teaspoon cinnamon ( extra)

    1. Pre heat oven to 200 degrees celcius.
    2. Either grease a 12 tray muffin tin or throw some paper patties into the tray whichever you prefer.
    3. Sift all dry ingredients together except the extra sugar and cinnamon into a bowl and make a well in the middle.
    4. Melt butter and honey over a low heat in a saucepan and put aside.
    5. Whisk eggs and milk together in a small jug and put aside.
    6. Add butter mix and egg mix and chopped apple all at once into dry ingredients.
    7. Mix with a metal spoon until just combined.
    8. Spoon mixture into muffin tin or paper patties/muffin cups.
    9. Mix extra caster sugar and cinnamon together in a small bowl.
    10. Sprinkle the top of each uncooked muffin with some of the caster sugar and cinnamon mix.
    11. Bake in oven for 20-25 mins or until golden brown and the middle springs back to the touch.
    12. Cool on cake rack and enjoy.

    Great recipe. I substituted chopped apple for 3 Royal Gala grated apples. Very moist and one of the best I have had. Made 12 medium muffins and 10 muffin tops what a bonus. Loved it. Thanks  -  18 Feb 2014
