    Moist and yummy these are a nice change from the normal cupcake. The apple and sultanas go well together. Add a dash of cinnamon if you like. Lovely hot out of the oven with a bit of butter or cool with a cup of tea. Or great in kids lunch boxes.

    Ingredients
    Makes: 16 Approx

    • 1 Granny Smith green apple
    • 3 handfuls of sultanas
    • 125 grams butter
    • 3/4 cup caster sugar or white sugar
    • 1/2 teaspoon vanilla essence
    • 2 eggs
    • 2 Cups self raising flour
    • 120 ml milk
    • 3/4 cup boiling water

    Directions
    Preparation:5min  ›  Cook:15min  ›  Extra time:10min soaking  ›  Ready in:30min 

    1. In a bowl, soak sultanas in just enough boiling water to cover them 10 mins or more before making cupcakes.
    2. Grate apple with the skin on, or off if you prefer. Put aside.
    3. Drain any excess water not absorbed by sultanas and put sultanas aside.
    4. Heat oven to 180 degrees celsius
    5. In a bowl, cream butter and sugar together until lighter in colour.
    6. Add vanilla essence and beat in one egg at a time until it is well combined.
    7. Add half the flour and stir until mixed in and then add the milk and other half of flour mixing it in alternatively.
    8. Add grated apple and drained sultanas and mix in well. If at this stage you find your mixture too runny just add a little more flour.
    9. Spoon into cupcake paper paddies . I sit my in the muffin tins to stop the mixture from sagging during the cooking.
    10. Cook for 15 mins or until top bounces back when touched and a nice golden brown.
    11. Cool on a cake rack
