This a rice salad that has an Asian twist, I developed it for something different. It was very well recieved at all buffets.
It is very refreshing and moreish also low in fat and most popular,
I have not seen anything similar.
This is very healthy and suits all dietary requirements YES even VEGAN.
Cook the rice and leave overnight or for 12 hours. This stops it from glugging together.
Chop dice and add all the ingredients to the rice but please do not mix it together till the end as it will break up the rice.
Once you have finished adding everything then turn and fold to mix; make sure it is combined evenly. Taste if you wish to tweak it.
Cover in plastic wrap and alow the flavours to develop.
If it gets a bit dry add more sweet chilli sauce
You can serve this salad as is at buffet or in lettuce cup with fish meat etc.
Once you taste, more ideas will flood your mind.
