Asian Rice Salad (Leo's)

    This a rice salad that has an Asian twist, I developed it for something different. It was very well recieved at all buffets. It is very refreshing and moreish also low in fat and most popular, I have not seen anything similar. This is very healthy and suits all dietary requirements YES even VEGAN.

    Serves: 8 

    • 6 cups cooked medium white rice (day old), can use brown rice
    • 1 medium onion cut fine
    • 2 teaspoons garlic cut fine
    • 3 teaspoons ginger cut fine or grated
    • 1/2 cup parsley chopped rough
    • 1 cup coriander, chopped
    • 1 tablespoon sesame oil
    • 1-1/2 cup sweet chilli sauce (add more to taste after 1 hr)
    • 2 lime juice and grated rind
    • 6 birdseye chilli (only if you like it HOT, less if no)
    • 1 red capsicum diced fine
    • 1 tablespoon palm sugar shaved and dissolved in rice vinegar
    • 3 tablespoon rice wine vinegar (or normal vinegar will do)
    • 1 tablespoon white wine if no rice wine (or 2 teaspoons of mirin)
    • 1 stalk lemon grass smashed and chopped fine

    1. Cook the rice and leave overnight or for 12 hours. This stops it from glugging together.
    2. Chop dice and add all the ingredients to the rice but please do not mix it together till the end as it will break up the rice.
    3. Once you have finished adding everything then turn and fold to mix; make sure it is combined evenly. Taste if you wish to tweak it. Cover in plastic wrap and alow the flavours to develop. If it gets a bit dry add more sweet chilli sauce
    4. You can serve this salad as is at buffet or in lettuce cup with fish meat etc. Once you taste, more ideas will flood your mind. ENJOY! LEO (COOL)
