Lemon Tart and Palm Trees

    Hands down the easiest lemon tart you will ever make. So incredibly yummy to eat and looks so magnificent. I often serve it as a dessert at my dinner parties with rave reviews.

    Serves: 6 

    • 2 lemons zested and juiced
    • 1 cup shredded coconut
    • 1 cup caster sugar
    • 4 beaten eggs
    • 125g soft butter
    • 1 cup cream
    • 1/2 cup coconut cream
    • 1/2 cup plain flour
    • 1 tablespoon icing sugar

    Preparation:10min  ›  Cook:50min  ›  Ready in:1hour 

    1. Pre-heat oven to 180 degrees C.
    2. Lightly grease a round cake tin and line the base with baking paper.
    3. Add all ingredients except the icing sugar to blender and process until smooth.
    4. Pour over the prepared tin and bake for 45 - 50 minutes.
    5. If the surface of the tart is getting too browned, cover with a sheet of foil until finished cooking.
    6. Remove from oven and leave in tin to cool and then refrigerate.
    7. Dust with icing sugar, cut into wedges and serve with softly whipped cream and fresh berries.

    This was a very easy recipe and it produced a delicious and gluten free tart. I will add a bit more lemon zest next time for a really really lemony impact 😋. Having said that, it is great as is.  -  01 Sep 2016


    I did the same thing only with lime, and still scrumptious with raspberries and cream. If the top looks a bit uneven, serving it upside down works fine.  -  05 Dec 2014
