Pork and Fried Mixed Vegetables

    This is an easy dinner that can all be cooked in one frypan. I like to cut all the vegetables so they are the same sized cubes so they look like the frozen version but they are so much nicer (or you can just use frozen ones).

    Serves: 4 

    • 4 pork loin medallions (Heart Smart)
    • 2 tablespoons oil
    • 1 onion, diced
    • 1 red capsicum, diced
    • 3 potatoes, diced and blanched
    • 1 cup peas
    • 2 carrots, diced and blanched
    • 1 teaspoon thyme, finely diced

    1. In a hot frypan cook the pork in the oil for 3 minutes, turn then cook for another 3 minutes until browned on both sides.
    2. Add more oil if required then add the onion and capsicum and cook for 1 minute.
    3. Add the potatoes, peas, carrots and thyme then cook for an additional 6 minutes.
    4. Place the pork back into the frypan on top of the vegetables and cook on medium heat until everything is cooked through.
    5. Serve straight away.
