Warm Christmas Salad

    Fresh ingredients combine in the Christmas colours with cherry tomatoes, sugar snap peas and feta. This is best served warm and makes a great entree or side.

    Serves: 4 

    • 2 cups of sugar snap peas
    • 1 tablespoon extra virgin olive oil
    • 1 cup of cherry tomatoes
    • 1/4 cup of diced mint
    • Salt and pepper, to taste
    • 1/2 cup of crumbled feta

    1. In a wok heat the olive oil. Add the sugar snap peas and stir fry. After a minute add the tomatoes, mint, salt and pepper. Only cook long enough to heat through and allow the flavours to combine, the peas should still be crisp.
    2. Stir through the feta and serve immediately.
