    This is a standard work lunch for me. I love all the different flavours especially the capsicum, artichoke, salami and olives. I make a big batch and it lasts most of the week.

    Ingredients
    Serves: 4 

    • 250g pre-made cheese tortellini
    • 1/2 cup roasted capsicum diced
    • 1/4 cup kalamata olives
    • 125g marinated artichoke hearts
    • 100g favourite cheese 1cm cubes
    • 100g salami cut into 1cm cubes
    • 60ml Italian vinaigrette

    Preparation:15min  ›  Cook:10min  ›  Extra time:2hours marinating  ›  Ready in:2hours25min 

    1. Cook the tortellini as per the packet instructions then drain and set aside.
    2. In a bowl combine the roasted capsicum, olives, artichokes, cheese, salami and the cooked tortellini.
    3. Cover with vinaigrette and stir to coat all the salad ingredients. Leave at least 2 hours to marinate.
    4. Toss and serve or divide amongst lunch boxes.
