Savoury Bread Pudding with Bacon

This is a great breakfast, brunch or lunch bake that is similar to a bread and butter pudding except savoury with bacon, capsicum and spinach.

Serves: 6 

  • 250g bacon, diced
  • 1 loaf of ciabatta or similar bread, broken into 2cm pieces
  • 1 capsicum, roasted and diced (can use deli or jarred capsicums)
  • 2 cups baby spinach leaves
  • 2 cups grated cheese
  • 6 eggs
  • 3 cups milk
  • 1 cup cream
  • 2 teaspoons Worcestershire sauce
  • salt and ground pepper, to taste
  • 1/4 cup grated cheese

Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

  1. Cook the bacon in a frypan until crisp then place on paper towel to drain.
  2. In a bowl combine the bread pieces, capsicum, spinach, bacon and cheese. Combine and tip into a buttered baking dish making sure the top is even.
  3. Wipe out the bowl then combine the eggs, milk, cream, Worcestershire sauce, salt and pepper.
  4. Tip the egg mixture evenly over the bread mix then sprinkle with the cheese.
  5. Bake at 180 degrees C for 45 minutes or until brown and slightly risen.
  6. Let rest for a short time then serve in the baking dish or slice and present on dinner plates.
