Grilled Tomato and Cumin Salsa

Place your tomatoes and onions under the grill to give them a smoky flavour and you can create this deliciously spicy salsa. You won't buy it again!


Serves: 24 

  • 12 roma tomatoes
  • 2 cloves garlic, unpeeled
  • 1 small onion, quartered
  • 1 green chilli
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 3 tablespoons fresh lime juice
  • handful chopped fresh coriander

Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

  1. Preheat the grill.
  2. In a medium baking dish, place tomatoes, garlic, onion and chilli then drizzle with olive oil.
  3. Checking often, grill 5 to 10 minutes, or until outsides of vegetables are charred.
  4. Remove vegetables from heat. Remove and discard tomato cores, chilli stem and garlic skins.
  5. In a food processor, coarsely chop the charred vegetables. Transfer to a medium bowl and mix in cumin, salt, lime juice and coriander.

We LOVE this stuff! I have to check the chip supply when I make this because once we start, we can't stop! I'm making a double batch today for the holiday weekend and visiting relatives. Two jalapenos is perfect for us, but they like their salsa super I'll double that amount for them! - 29 Sep 2008


I've made this recipe a few times, and each time it tastes different...but good all the same. Getting the roasted skins off the vegetables is a bit time consuming, but overall, the time that goes into it is worth it. Tastes especially good mixed into ground beef for Mexican dishes - 29 Sep 2008
