Homemade Sausage and Egg Muffins

I have concluded that it is easier and healthier if I just make my own sausage and egg muffins at home. Sometimes I exchange the sausage for bacon or even use both.

Serves: 4 

  • 4 sausages
  • 4 English muffins
  • 4 eggs
  • 4 slices of cheese
  • 4 squirts of tomato sauce

Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

  1. Heat a frypan and add a slight bit of oil. Squeeze the sausages from their skin into the frypan to form flat patties.
  2. While cooking half and toast the muffins.
  3. When the patties are almost cooked through push to the side and fry the eggs.
  4. On a muffin half add a flat sausage, piece of cheese, fried egg, a squirt of sauce then the muffin top.
  5. Serve hot and wrapped in baking paper if you are going for the fast food feel.

Eating Tip

If you like your fried eggs soft break the yolk when you make the sandwich so it doesn’t burst when you bite into it and end up on your shirt.

Who needs the golden arches when you can make a quick healthy breakfast at home? These were very good. For a good sandwich stay away from the cheap dry English muffins. I used a good refrigerated variety of muffin called Bays and they worked beautifully. - 19 May 2013
