Three Weet-Bix, sugar and coconut...the beginnings of a tasty treat coated in chocolate and sprinkled with coconut.
1 cup self raising flour
1 cup dessicated coconut
3/4 cup soft brown sugar
3 Weet-Bix, crushed
125g butter, melted
200g dark chocolate melts/buttons
30g extra butter
1/4 cup extra dessicated coconut or sprinkles

Preheat oven to 180 degrees C.
Line a shallow 28cm x 18 cm cake tin with non-stick baking paper.
In a large bowl, combine flour, coconut, sugar and Weet-Bix.
Make a well in the centre and add melted butter. Stir with a wooden spoon.
Press mixture firmly into the prepared tin.
Bake 20 minutes, at 180 degrees C. Remove from oven and stand to cool for 10 minutes before icing.
Make icing: Stir chocolate and butter in a small saucepan over low heat until melted.
Spread over the warm slice, smoothing with a flat bladed knife. Sprinkle with extra coconut or sprinkles.
Allow icing to set and cool down before cutting into squares. Other ideas
If you cool this slice in the fridge, allow it to come back to room temperature before cutting into squares so it won't be so brittle.
This is a must for everyone to try. It is so easy to make and the kids can easily get involved. Has been a hit every time I make it

Very easy to prepare. It's hard to stop at one bite!

Super fast and easy to make. I was 1/4cup short of coconut so I just added an extra weetbix and I threw in a small handful of mini marshmallows and mixed them in after adding the butter. My normally fusy kids loved them so this ones a keeper!
