In a big bowl, crack the eggs and whisk until they become fluffy. Then combine frozen veges, grated cheese and soy sauce into the mixture.
Using a large wok, turn up the heat until its really hot. Put in the olive oil then pour in the mixture. If using a smaller wok, you can divide the mixture into two and create two smaller omelettes rather than one giant omelette.
Cook for at least 5 minutes on one side before flipping and cooking on the other for about the same time.
When cooking omelette, try not to turn it too soon. Let it cook for a while before flipping to the other side. This makes it crispier and brown on the outside.
