Quick Baked Kumara

    This is a great recipe full of goodness of carbohydrate and protein. I use cans of Tuna or Salmon and Edam cheese to make it even more healthier.

    Makes: 2 

    • 2 big round kumaras
    • 185g can plain tuna/salmon in olive oil
    • 2-3 tablespoons sweet chilli sauce
    • 3/4 cup grated Edam cheese

    1. Wash the kumaras, keep the skins on, then put them whole in microwave for about 10 - 15mins until they are soft and cooked. Be careful not to overcook as it destroy the shape of the kumara.
    2. Cut of the top of kumara and scoop the flesh out. Again be careful not to scoop out too much and not to get any of the skins. Put the flesh in a bowl and mix it with can of tuna/salmon and 1/2 cup of the grated cheese. Combine with sweet chilli sauce.
    3. Put the mixture back into the kumaras, until they are stuffed to the top.
    4. Sprinkle the remaining grated cheese on top. Put them in the oven and bake for 5mins at 190 degrees C or until the outside skins becomes crispy and the cheese has melted.

    Serving suggestion

    You can serve them with side salad. Great to have as a healthy low GI meal.
