Celebration Jelly Ring

    This is a great adult jelly dessert and looks really fancy when done in a jelly ring with fresh fruit in the centre. I pick the fruits to match the event such as red and green for Christmas.

    Serves: 6 

    • 2 packets lemon jelly
    • 1 1/2 cups (375ml) white wine
    • 2 cups (500ml) soda water
    • 1 shot (45ml) orange liqueur, optional
    • 3 cups diced fruits cold

    1. Bring the wine to the boil then take off the heat and stir in both jellies to dissolve.
    2. Stir in the soda water and orange liqueur.
    3. When the mixture is starting to thicken add the cold fruits, the thicker the jelly the better as the fruit will distribute though the jelly rather than sinking to the bottom.
    4. Pour into a jelly mould of bowl of choice. Refrigerate until set.
    5. To serve the dessert removed from the mould or bowl onto a serving plate with additional fresh fruit.
