Tomato and Mozzarella Salad

    This is a beautiful red, green and white salad that adds a colourful aspect to your dinner spread. I find that the colours remind me of Christmas so it is always part of that time of the year for me.

    Serves: 4 

    • 250g buffalo Mozzarella cheese
    • 6 tomatoes
    • 1 sprig basil leaves, thinly sliced
    • 4 tablespoons olive oil
    • 2 tablespoons balsamic vinegar
    • salt and pepper, to taste

    1. Slice the tomato and Mozzarella into 1/2cm slices.
    2. Whisk the olive oil, balsamic vinegar, salt and pepper to create a dressing.
    3. To serve: layer the tomato and cheese alternatively on the serving plate. Drizzle with the dressing. Sprinkle with the sliced basil.

    Ingredient Note

    As this is a really simple dish it requires good quality ingredients. The tomatoes should be really fresh, red and ripe. A good quality buffalo Mozzarella cheese bought from the deli in liquid works best. The cheese and tomatoes look best if they are about the same size.
