Slice the tomato and Mozzarella into 1/2cm slices.
Whisk the olive oil, balsamic vinegar, salt and pepper to create a dressing.
To serve: layer the tomato and cheese alternatively on the serving plate. Drizzle with the dressing. Sprinkle with the sliced basil.
As this is a really simple dish it requires good quality ingredients. The tomatoes should be really fresh, red and ripe. A good quality buffalo Mozzarella cheese bought from the deli in liquid works best. The cheese and tomatoes look best if they are about the same size.
