    This is a wonderful tart that is easy and has all the bright Christmas colours of red (tomato), white (cheese) and green (basil).

    Ingredients
    Serves: 4 

    • 1 sheet frozen puff pastry
    • 10 tomatoes
    • 1 block feta
    • 1/2 cup pesto
    • salt and pepper, to taste
    • extra virgin olive oil
    • 2 sprigs basil, leaves removed

    Directions

    1. Lay out the sheet of puff pastry then pick all over with a fork.
    2. Bake in an oven at 220 degrees C for 5 minutes or until brown. Take out of the oven and cool.
    3. Wash the tomatoes then cut into 1cm slices. Crumble the feta into pieces about 1cm cubed.
    4. Spread the cooled pastry with the pesto, lay the tomatoes on the pasty in lines slightly overlapping the tomato before it. Sprinkle with half the feta. Sprinkle with a pinch of salt and pepper.
    5. Bake in the oven at 180 degrees for 10 minutes or until the tomatoes start to wilt and look juicy.
    6. Remove from the oven then drizzle with olive oil, sprinkle with remaining cheese and the basil leaves. Serve warm.
