Coconut, Chocolate and Zucchini Bread

    This is a moist, tasty bread, where coconut provides an exotic flavour; and chocolate adds an indulgent sweetness.

    Serves: 10 

    • 3 eggs
    • 1 cup (250ml) vegetable oil
    • 1 cup (200g) white sugar
    • 2 cups (230g) grated zucchini
    • 3 cups (375g) plain flour
    • 1/4 teaspoon baking powder
    • 1 tablespoon bicarb soda
    • 1 teaspoon salt
    • 3/4 cup (55g) desiccated coconut
    • 1/2 cup (85g) dark chocolate chips

    1. Preheat an oven to 180 degrees C. Grease a 23x12 cm loaf tin.
    2. Beat the eggs in a large bowl until frothy. Stir the vegetable oil, sugar and zucchini into the eggs.
    3. In a separate bowl, sift the flour, baking powder, bicarb soda and salt together; stir into the zucchini mixture until combined. Fold the coconut and chocolate chips into the mixture; pour into the prepared loaf tin.
    4. Bake in the preheated oven for 45 to 50 minutes, until a skewer inserted in the centre comes out clean. Cool in the tin for 10 minutes before removing to cool completely on a wire rack.

    I make this into muffins as it always cooks a little more evenly for me. Also, I mix about 1/4 cup sugar and about a teaspoon of cinnamon in a small bowl and sprinkle on top before baking. It's so good!!  -  23 Sep 2010  (Review from Allrecipes USA and Canada)

    This bread is pretty good and easy to make. I used 2 cups whole wheat flour and 1 cup all purpose flour and the texture of the bread wasn't too heavy. I would probably add some cinnamon to the mixture next time for added interest.  -  28 Sep 2010  (Review from Allrecipes USA and Canada)
