Zesty Italian Pasta Salad

    Here's a great pasta recipe to accompany your next BBQ lunch or dinner. A great mix of fresh vegetables, with a lush flavoursome feta cheese throughout.

    Serves: 6 

    • 330g spiral pasta
    • 3 carrots, peeled and diced
    • 1 red capsicum, chopped
    • 1 yellow capsicum, chopped
    • 1 green capsicum, chopped
    • 2 spring onions, chopped
    • 1/2 red onion, diced
    • 450g broccoli, cut into florets
    • 1 large tomato, diced
    • 3 stalks celery, diced
    • 1/2 cup (125g) crumbled feta cheese
    • 1 cup (250ml) Italian dressing

    Preparation:25min  ›  Cook:10min  ›  Ready in:35min 

    1. Bring a large pot of lightly salted water to the boil. Place pasta in the pot and cook for 8 to 10 minutes and al dente. Drain and rinse in cold water.
    2. In a large bowl, mix cooked, cooled pasta with the vegetables. Sprinkle with feta cheese and toss with Italian dressing to serve.
