Spiced Oatmeal Chocolate Chip Cookies

    Oatmeal cookies that have the indulgence of chocolate chips, with the aroma of cinnamon spice. A treat for anytime of the day or night!

    Makes: 24 biscuits

    • 450g butter
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 2 cups (290g) brown sugar
    • 1 cup (120g) icing sugar
    • 3 cups (375g) plain flour
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 1 tablespoon ground cinnamon
    • 3 cups (245g) rolled oats
    • 1 cup (170g) dark chocolate chips

    1. Preheat oven to 180 degrees C. Grease baking trays.
    2. In a large bowl beat butter, eggs and vanilla until well blended. Beat in the brown sugar and icing sugar.
    3. Combine the flour, bicarbonate of soda, salt and cinnamon, then stir into the sugar mixture. Finally stir in the oats and chocolate chips.
    4. Roll the dough into walnut sized balls. Place the cookies 5cm apart onto the baking trays.
    5. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking tray for 5 minutes before removing to a wire rack to cool completely.

    These are one of the best oatmeal chocolate chip cookies I've had. I actually left out the cinnamon by accident and added extra chocolate chips. Very soft/chewy in the center. This recipe makes about 5 dozen cookies.  -  08 Feb 2008  (Review from Allrecipes USA and Canada)

    I love food, but I'm not the biggest fan of cookies.I bake them but don't neccessarily eat them. So, when my son asked for oatmeal cookies of course I went to Allrecipes.com. to find a decent recipe. I found this recipe and boy are we, yes I said we, hooked. I made the first batch and because they didn't last but a day, my son requested that we make some more the next day. I was very busy so my 15 year son made them on his own. Very good recipe - I did make a few changes. I always undercook our cookies because we like them soft and chewey. I also added 1/2 cup of shredded coconut and 1/2 of butterscotch chips.
