Yummiest Chocolate Chip Cookies

    A chocoholic's dream cookie! A sweet treat combining dark and milk chocolate with honey, combined with rice bubbles and rolled oats to give them just that healthy little edge.

    Makes: 36 biscuits

    • 200g butter
    • 1 cup (200g) sugar
    • 1/2 cup (70g) brown sugar
    • 1/2 cup (120ml) honey
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 2 cups (250g) plain flour
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon salt
    • 1/2 cup (50g) rice bubbles
    • 1/2 cup (40g) rolled oats
    • 1 cup (180g) dark chocolate chips
    • 1 cup (180g) milk chocolate chips

    1. Preheat oven to 180 degrees C. Grease baking trays.
    2. In a large bowl cream together the butter, white sugar, brown sugar and honey until smooth. Beat in the eggs one at a time then stir in the vanilla.
    3. Combine the flour, bicarbonate of soda and salt; stir into the creamed mixture.
    4. Using a wooden spoon, stir in the cereal, oats and chocolate chips. Drop heaped teaspoonfuls onto the prepared baking trays.
    5. Bake for 8 to 10 minutes in the preheated oven, until golden. Allow cookies to cool on baking tray for 5 minutes before removing to a wire rack to cool completely.

    A good recipe to try out for a slightly different chocolate chip cookie...the rice krispies gives it a nice little crunch! The combo of chocolate chips is nice too! I found I needed to add a bit more oats so they didn't spread too much...but otherwise, I made it as written (which I encourage you to do too... then make modification if necessary!!).     these are really good! i added 2 additional cups of oats, and I also used half butter, half shortining. These are one of our favorites, and I love the honey flavor.
